The BOMs keep their costs until they are updated. Change the price, then press Update Cost.
ERPNext updates the lowest BOMs first, then the ones above. Manufacturing Settings can do this every day.

Rate Of Materials Based On
Valuation Rate (the default), Last Purchase Rate or a Price List — where each raw material’s rate comes from.
Set rate of sub-assembly item based on BOM
On by default: a sub-assembly is costed from its own BOM, so prices ripple up.
Update BOM Cost Automatically
In Manufacturing Settings, off by default. On, ERPNext refreshes BOM costs every day.
Each BOM adds up its raw materials, its operating cost, and takes off scrap. A sub-assembly is priced at its own BOM’s cost per unit, so costs roll up from the lowest level.
A BOM keeps its costs until it is updated: press Update Cost, use the BOM Update Tool, or switch on “Update BOM Cost Automatically” in Manufacturing Settings.
From “Rate Of Materials Based On” on the BOM: the valuation rate by default, or the last purchase rate, or a price list.
A sub-assembly’s cost per unit is its total cost divided by the good quantity — what is made minus what is lost.
Yes, untick “Set rate of sub-assembly item based on BOM”. Then raw-material price changes stop at the sub-assembly.
We build your BOMs level by level, set the costing rules, and make sure a price change reaches the finished goods. Talk to a consultant.
