Walk into a spice godown near the Kattappana spice market and you will see stacks marked in chalk: a grower's name, a date, perhaps a grade. The storekeeper knows what is where. The books, kept elsewhere, know only the total weight bought and sold. Between the two lies everything that matters: which lot, what grade, how old, whose money is in it, and how much weight it has lost.
