For most ERPNext systems the final cutover fits in a weekend window, because the trial migration has already been rehearsed. Users stop work on Saturday evening and log in to the new address on Monday. Larger databases are planned individually.
Yes. The cloud account is yours, ERPNext is open source with no per-user licence fee, and backups are in standard formats. You can take over the servers yourself or move to another provider whenever you choose, and we will hand over the documentation.
